With a little imagination, producing delicous smoked food is easy.
Even the most inexpensive cuts of meat, fish, fowl or vegetables can be turned into gourmet fare.

should be taken not to overcook. For example tuna steaks may take less than 10 minutes, rabbit or pork loin may take 30 minutes.
Any food can be marinated or rubbed with flavoured oil or herbs, spices, citrus rind or garlic prior to smoking.
Foods naturally rich in oils (salmon etc.) are perfect for smoking – and usually need no marinating. Even foods low in fat can be successfully smoked by marinating and placing a small metal container of water in the smoker to add humidity.
The natural oils in inexpensive fish such as mackerel, mullet and tailor make them ideal for smoking, keeping the smoked fish moist and flavoursome.

The type of wood used will affect the flavour of the smoked products slightly.
Timbers recommended for smoking include: paperbark, hickory, mesquite, oak, banksias, ash, spotted gum, etc. Innovative chefs are also adding leaves, spices, teas and herbs for a more unique flavour. Togar ovens are supplied complete with racks, base, methylated spirits burner, and a bag of pure, selected wood sawdust (specially blended from selected timbers, containing NO chemicals, NO contaminants.)
The utmost care must be taken if you provide your own sawdust that it is free from all contaminants. Sawdust available from many sources may contain traces of toxic glue and/ or chemical wood preservatives. An additional supply of special blend of pure wood sawdust from carefully chosen timbers is always available from Togar.
